Dough development: Fritsch marks 100 years of bakery engineering

Fritsch is marking 100 years of operation, reflecting a century of development in bakery equipment and production technology. Founded in 1926, the company has evolved from manufacturing manual dough sheeting machines to supplying industrial-scale lines used globally across a range of bakery applications.

“Fritsch has always been driven by a passion for dough, with every development centred on delivering quality through flexible, efficient and reliable production lines,” says Matthew Graham, bakery sales consultant for Multivac.

Over time, the business has supported a wide range of customers, from artisanal bakeries through to large-scale producers, with systems designed to handle different product types and production requirements. These relationships have often developed over long periods, reflecting the role equipment plays in ongoing production.

Fritsch operates as part of the Multivac Group, with local support provided in New Zealand by Multivac New Zealand. The business maintains operations in Auckland and Christchurch, with a team of more than 40 staff supporting installation, maintenance and service requirements across the country.

Graham says that support is an important part of how equipment is implemented and maintained.

“Whether it is a small bakery producing traditional pastry or a large-scale operation manufacturing high-volume products, the approach is to work closely with customers to match equipment capability to production needs,” he says.

In 2025, Fritsch received the Bakery Machine of the Year award at the International Bakery Awards for its Progressa Pastry Line, recognised for hygienic design, operational flexibility and ease of use.

Multivac also received recognition at the same awards, with its Cooling@Packing system named Packaging Machine of the Year. The system cools products during thermoforming, supporting product quality and extending shelf life during packaging.

“For 100 years, Fritsch has combined craftsmanship, innovation and a focus on the product itself,” Graham says. “The commitment remains to support bakers of all sizes with equipment that improves quality, efficiency and consistency.”
